Chili Over Everything -The Everything

When you have chili over everything, you must have the everything to put the chili over.

So here is what we put the chili over, in other words, the everything.

  • Fritos
  • French Fries
  • Mashed Potatoes
  • Spaghetti

Oh, and we put chili in cornbread muffins and then wrapped them in bacon.

Here are some of those recipes.

Frito Pie – This one is  probably easiest.  Preaheat oven to 350 degrees. Put Fritos in a pie plate, top with chili and then cheese.  Bake in the oven until cheese is melted.  Top with sour cream and green onions – eat.

Homemade French Fries

Ingredients

  • 3 Large Potatoes (skin on)
  • 2 tablespoons olive oil
  • Seasonings – I use seasoned salt, red pepper flakes, cayenne pepper, and paprika

Steps

  1. Clean potatoes and cut into thick to medium-thick slices.
  2. Soak potatoes in water for water for at least 30 minutes.
  3. Preheat oven to 425 degrees.
  4. Dry potatoes and put them in a zip-loc bag. Toss with olive oil and seasonings.
  5. Line a cookie sheet with tinfoil and spray tinfoil with Pam.
  6. Bake in an oven for 20-25 minutes.

I am skipping the recipe for the mashed potatoes and the spaghetti, but for different reasons. Everyone has their favored mashed potato recipe, most of them are pretty similar, and there is nothing particularly different about mine.

As to the spaghetti, well, it didn’t turn out.  The recipe wasn’t as clear as I would like.  My eggs were apparently smaller than the eggs the recipe used, so my dough was way too dry so I had to improvise.  And then the noodles took longer to cook than the recipe said.  All in all, I am not sure I want to take up homemade spaghetti making.

Now for the chili-filled bacon-wrapped cornbread muffins.

I lined the muffin tins with two strips of bacon each and pre-cooked the bacon – about 10-15 minutes in a 350 degree oven.  Next time I think I would either pre-cook the bacon flat on a cookie sheet, or wrap the bacon around the outside of the muffin tins and then transfer the bacon to the inside.

I used a box corn-bread muffin mix and made them according to the directions. I put one scoop of the mix into the bottom of the chili-lined muffin tins, then one scoop of chili, and then one more scoop of the muffin mix.  I then baked the muffins according to the package directions.
