I Don’t Cook Unless There is a Packer Game . . .

Instead, we eat peanut butter sandwiches, no jelly.

Just kidding.  I actually missed cooking today, but luckily, I decided to make a batch of scones at the last minute because I wanted to dessert.  It is a really easy recipe and it took me about a half hour to make, bake, and clean up.

I asked Ryan to make me dessert and he offered his go-to . . . Ice Cream.  I wasn’t in the mood for ice cream, so I decided to make the scones. That boy would eat ice cream every day if it wasn’t for me.  In fact, he topped the scones with ice cream.  His metabolism is something to be envied.  Speaking off, contrary to what my typical posts may lead you to believe, we do attempt to eat healthy (and on a budget) most days.

Here is the recipe in case you are looking for an easy treat . . .

Ingredients

  • 2 cups flour (I used all purpose)
  • 2 teaspoons baking power
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 stick butter
  • 1 egg
  • 3 tablespoons honey
  • 1/3 cup milk
  • 2 tablespoons brown sugar
  • ½ to 1 teaspoon cinnamon

Steps

  1. Preheat oven to 400 degrees (less if you are using dark/non-stick pans)
  2. Mix together all of the dry ingredients
  3. Cut the butter into the dry ingredients
  4. Separate the egg yolk and the egg white – set both aside.
  5. Mix together egg yolk, honey, and milk.  Add to the dry ingredients.
  6. Roll (or push if you are like me and your boyfriend does not own a rolling pin – Ryan pretty much owns no cooking tools other than paper plates – until two or three months ago Ryan owned four, count them, four, total dinner plates and it took me almost two years of dating to convince him that he needed to buy one, just one, serving plate) the dough out to about a inch thick
  7. Either cut into pieces like pizza slices or cut out in cookie shapes (again, if you are like me, and your boyfriend owns no cookie cutters, use a water glass)
  8. Place on a greased cookie sheet
  9. Whisk the egg whites
  10. Brush the top of the dough with the egg whites
  11. Mix together brown sugar and cinnamon
  12. Top dough with brown sugar and cinnamon
  13. Bake 12-14 minutes (or 10-12 minutes if you have the cookie cut-outs)
  14. Eat immediately when they are still warm
  15. If your name is Ryan, top with ice cream

Please note the dinner plate in the picture below. This is not one of the original four, and no Ryan did not go and buy a new set of dinner plates.  Instead some lovely person took pity on us and gave us some unused plates.
